The Redd

The Redd is a family traditional meal made by my mother. She taught me how to make them before she passed but they never had a name so I decided to name it after her. Its simple, yet complex. Something for the whole family to enjoy.

The Redd – Yield 6 servings

Ingredients

3lbs – Chicken Breast

3 Each – Roasted Green Chilis

8 oz. – Cream Cheese (Whipped)

6 Each – Flour Tortillas

To taste – Garlic Powder

To taste – Salt

To taste – Pepper

4 cups – Vegetable Oil

Instructions

1.      Grill or Sautee the chicken breast. Making sure to season well.

2.      Once cooked thoroughly, place the chicken in the fridge allowing it to cool (Should take 15 minutes.)

3.      While the Chicken is cooling in the fridge it is the perfect time to prep and skin the green chilis. Making sure to remove the skin and the seeds from the peppers. Place in a large bowl.

4.      Once the Chicken is cooled place it in the large bowl that you placed the green chili in and shred the two ingredients together.

5.      Add the Whipped Cream Cheese to the mixture and mix it well. Everything that is in the bowl should be covered in Cream Cheese.  Season to taste.

6.      Warm your tortillas in any way that you desire. This way it is easier to roll.

7.      Add 2 ½ cups of the mixture per tortilla. Roll them into a burrito and wet a brush with water. Brush the water under the ending fold of the tortilla to seal it shut.

8.      Heat vegetable oil, in a deep pan or pot, to 350 degrees to 375 degrees. Place the burrito in pan and cook until the outside of the burrito is golden brown.

 

Plate and enjoy!
